Keemun black tea is made by hand, and its quality depends on the skillof the hand. Therefore, Keemun black tea is also called "Keemun Gongfublack tea". The production techniques of Keemun black tea are divided intothree parts: picking, initial processing and fine processing.

Picking

Generally, the picking period is from around the Grain Rain to July, and thestandard picking is one bud with two or three leaves.

Initial processing

The initial processing involves turning fresh leaves into rough tea. The initial processing isdivided into four steps: withering, rolling, fermentation and drying.

Finishing

The tea leaves that are initially made are called raw tea and must undergo furtherfinishing. The refining process consists of four steps: sieving, picking, refiring, and official piling.
